Industrial control technology was born with the earliest stirrings of the industrial revolution, and has continued to evolve: from simple mechanical governors to today’s most sophisticated digital control systems. This course will survey the huge range of applications in industrial control today, and then introduce you to the rudimentary basics of control theory. Then we will take you through some of the basic types of controllers used in process control and motion control. From surveying approaches, we will move on to implementation, and discuss the many ways of building an industrial control system, from custom silicon to board-level computers, microcontrollers, FPGAs, and PCs. The course is intended for electronics engineers with no previous exposure to industrial control systems.

I found this to be a good introduction/refresher on the topic. It has inspired me to dust off a few conceptual designs and revisit them.
